Red Lentils, *beep*ake (I Yi Yi -Sheeetake Mushrooms-), Veggies And Coconut Milk, Soup

Red Lentils, *BEEP*ake (i Yi Yi -Sheeetake Mushrooms-), Veggies and Coconut Milk, Soup
Use either a large Stock Pot, or a Slow Cooker perhaps along with a frying pan; as well as using another Pan (to prepare Broth) or a water boiler for preparing Water to then mix with Bouillion in the Stock Pan (used for the soup) or the Slow Cooker...
Ingredients (in the order to be used, the -number- to the right corresponds to the different timings of 'when' to add such):
2 Onions, chopped small. -1- (cook a minute or two on medium to high, you want them to be transluscent by the end of -2-)
2 tsp Turmeric. -2-
1 large tsp of Cumin, Coriander and Ginger Powder. -2-
Pinch of Himalayan Salt and Black Pepper. -2-
4+ cloves of Garlic, minced. -2-
1 can of Diced Tomatoes with the juice, or freshly diced Tomatoes. -3- (you'll just want this to blend in for a minute or so)
2 Celery branches of chopped, largely. -3-
6 cups of already hot, or boiling, Broth. -4-
2 cups Red Lentils which can be soaking in water from when you prep the ingredients or when you start the onions. -4-
1.5 cups of *BEEP*akes, chopped into smallish cubes. -5- (-5- will be the last steps until the Coconut Milk. Let first begin to boil, then simmer it for at least an hour; if in slow cooker then hours on medium or less on high)
3 Carrots chopped, largely. -5-
1 can Coconut Milk -6- (cook for 20 minutes, then serve)
1/2 cup to cup of freshly chopped Cilantry, as topper on soup when serving. -7-
