Sweet Potato Curry-Coconut Pureed Soup how I an I do it, typically.
(A Hand-held Blender is necessary for the best results. This is for a large, perhaps a few meals, amount; for 2 people.)
-- Sweet Potatoes, 3 or 4
Peeled and chopped into chunks.
Once the Red Onion is 'transluscent' and covered in the spices plus herbs, add the Sweet Potatoes.
-- Red Onion, 1 medium or large (white or sweet onions also work)
Chopped into slices.
First into the pan after the Oil has heated briefly on a medium-high heat.
-- Oil (Coconut, Sesame, GrapeSeed, Olive, or whichever other) or Butter.
However much works, perhaps start with a tablespoon or two.
-- Spices and Herbs:
Turmeric, Paprika, Coriander, Cumin, Ground Ginger, Curry, Thyme, Mexican Oregano, Himalayan Salt, Black Pepper
Not much Salt and Pepper. Play around and find what you like with the rest. I an I recommend around a 1/2 tsp to an overflowing tsp, of each.
Add all of these to Onions in Oil, at the very beginning.
-- Garlic, 2 or 3 cloves (more, of course of any ingredient, if you desire)
Chopped into chunks, or Minced.
Add soon after the Sweet Potatoes, or along with; stirring regularly till Water is added.
-- Peppers, 1/4 to 1/2 of 1 (red or green) -optional-
Chopped into slices.
Add along with other -optional- ingredients, a few minutes before blending.
-- Green Onions, 2 or 3 -optional-
Chopped up.
Add along with other -optional- ingredients, a few minutes before blending.
-- Parsley, small handful -optional-
Chopped up.
Add along with other -optional- ingredients, a few minutes before blending.
-- 'Not-Chicken' Bouilon Cubes, 2 or 3 cubes
Boil 1.5 litre of Water, and mix in the Bouilon Cubes.
Add that, once all the other, above, ingredients are combined and cooking in the pan.
Set on a medium-low, or simmer, heat and cover. Stirring every few minutes.
Once the Sweet Potatoes are soft (perhaps 30-45 minutes in) carefully, on no heat or simmer only, 'Blend' (again 'ideally' with a Hand-held Blender) to a puree.
-- Coconut Milk, 1 can
Add after the soup is pureed, then let cook a few minutes on simmer, stirring it in.
